The Lost Art of Making Pure Desi Ghee

Step 1: Sourcing Pure Milk

Step 2: Culturing the Milk (Making Dahi)
The fresh milk is gently heated and then cooled to the right temperature. A small amount of natural yogurt culture is added and the milk is left overnight to ferment into thick, creamy Dahi (yogurt). This culturing process is what gives Desi Ghee its distinctive rich flavor that commercial ghee simply cannot replicate.
Step 3: Churning the Butter (Bilona Method)
The cultured Dahi is then churned — traditionally using a churner called a bilona or madhani — to separate the butter from the buttermilk. This churning process preserves the natural nutrients and creates a butter with a depth of flavor.
Step 4: Slow Simmering
The fresh butter is placed in a heavy-bottomed pan and heated on a low flame. As it slowly melts and simmers, the water evaporates and the milk solids separate and settle at the bottom. This process requires patience — rushing it with high heat destroys the nutrients and flavor.
Step 5: Straining and Storing
Once the ghee turns a beautiful golden color and the milk solids turn light brown, it is carefully strained through a fine cloth to remove all impurities. The result is pure, crystal-clear Desi Ghee with a rich aroma and deep golden color.
